<P>PROBLEM TO BE SOLVED: To provide a whitener for food and drink, preservable for a long period at a normal temperature without performing ultrahigh temperature short time sterilization using an LL sterilization method, and without giving aseptic packaging. <P>SOLUTION: This whitener for food and drink is distributable at a normal temperature, and includes at least oil and fat, an emulsifier, a pH adjuster, a preservative, and saccharide, and has a sugar concentration of the water soluble part of 10-60%. The whitener for food and drink includes a prescribed amount of glucide which a conventional whitener does not contain, so the whitener is preservable for a long period at a normal temperature without performing ultrahigh temperature short time sterilization using an LL sterilization method, and without giving aseptic packaging, and can contribute to reduction of cost and time in a production process and a distribution process. <P>COPYRIGHT: (C)2010,JPO&INPIT |
