<P>PROBLEM TO BE SOLVED: To provide a fatty oil-fat composition for margarines, excellent in plasticity, workability on the preparation of bread or confectionary, solubility in mouths, and flavor also after preserved for a long period. <P>SOLUTION: Provided is the fatty oil-fat composition for margarines, characterized by comprising two kinds of transesterified oils having different iodine values, respectively, and containing at least one of 1,2,3-tripalmitoylglycerol, 3-oleoyl-1,2-dipalmitoylglycerol, and 2-oleoyl-1,3-dipalmitoylglycerol in a specific oil amount in the transesterified oils. <P>COPYRIGHT: (C)2010,JPO&INPIT |
