<P>PROBLEM TO BE SOLVED: To provide a kneading element of a kneader and the kneader by which a dough block being pressed by the kneading element can directly receive a large pressing force from the total area of the inner peripheral surface of a pot as well. Ž<P>SOLUTION: The kneading element (2) is equipped with a first blade section (21) and a second blade section (22). The bottom surface peripheral edge shape of either one of the first blade section (21) and the second blade section (22) is approximately semi-oval. The kneading element (2) has a first slope (25) which is formed on the side surface of the first blade section (21), a second slope (26) which is formed on the side surface of the second blade section (22), and a standing surface (28) which is formed on the back surface in the rotation direction of the second blade section (22). When cut by a plane which is "orthogonal to the bottom surface of the second blade section (22)", and also "including the rotation axis", the cross sectional shape of the second slope (26) in one region from the front side in the rotation direction to the rear side in the rotation direction of the second blade section (22) is a curved line which curves to the bottom surface side of the second blade section (22).
