<P>PROBLEM TO BE SOLVED: To provide a freeze concentration device capable of forming ice crystal more less in the incorporation of solute. Ž<P>SOLUTION: The freeze concentration device 100 is provided with a freezer 1 concentrating a concentrating object liquid by cooling the liquid and freezing moisture in the liquid, and a fine bubble generation means 2 generating fine bubbles and supplying them to the concentrating object liquid. The fine bubbles supplied to the concentrating object liquid by the fine bubble generation means 2 serve as cores in formation of the ice crystal by the moisture in the concentrating object liquid, to suppress occurrence of supercooled state. Thus, suppression of occurrence of rapid freezing in releasing from the supercooled state allows formation of the ice crystal less in the incorporation of the solute.
