<P>PROBLEM TO BE SOLVED: To provide a freezing method capable of suppressing dryness of a food surface, caused by cool air spraying, in a technology of forming an ice film on a food surface and freezing: and to provide a freezing apparatus. Ž<P>SOLUTION: This freezing method comprises repeating a step of supplying sherbet-like ice to a refrigeration room 5 where food is put, a step of decreasing a food temperature by sherbet-like ice, and a step of discharging sherbet-like ice from the refrigeration room 5.
