<P>PROBLEM TO BE SOLVED: To provide a konjak food material usable for various kinds of cooking without spoiling the nutritious and low-calorie characteristics of konjak, and to provide a method for producing the konjak food. <P>SOLUTION: The method for producing konjak food material includes: a swelling step of adding konjak powder and rice bran to water or hot water and stirring the mixture followed by swelling the mixture; a kneading step of adding a coagulant to the swollen mixture and kneading the mixture; a coagulation step for heating the kneaded mixture after kneaded to coagulate the mixture; a crushing step of crushing the coagulated mixture coagulated in the coagulation step; a PH-adjusting step of washing the crushed mixture and adjusting the PH; and a dehydration step of dehydrating the PH-adjusted crushed mixture. <P>COPYRIGHT: (C)2010,JPO&INPIT |
