PURPOSE:To obtain stock seasoning free from problems such as deterioration of taste after concentration or during preservation by forming water-resistant and thermostable gel, baking and drying and providing transparent stock. CONSTITUTION:As a method of feeding a bivalent or polyvalent metallic ion required for gelatinization of a solution of water-resistant and thermostable gel forming substance, a dried sheet containing a metallic salt or a flat material having the surface coated with the metallic salt is used as a metallic ion donor, the solution of water-resistant and thermostable gel forming substance is applied in a thin film state to the donor. Before the solution is gelatinized, a stock raw material is attached to the surface of the solution or the solution of water- resistant and thermostable gel forming substance is blended with the stock raw material, the metallic ion donor is coated with the blend in a thin film state and then gelatinization is completely finished to give stock seasoning. |
