FIELD: food industry. ^ SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Allspice is extracted by liquid nitrogen with miscella separation. Prepared yacons, rosehips, apples and pears are cut, dried separately in microwave field at preset parametres till residual humidity about 20%. Yacons and barley grains are fried. Rosehips, apples and pears are dried by convective method till residual humidity about 5%. Yacons, barley grains, rosehips, apples and pears are, mixed in mass ratio 5:9:2:2:2 and put into cryomiller shell. Obtained mixture is impregnated by separated miscella with simultaneous pressure boost. After the impregnation the pressure is released and the mixture is frozen. The mixture is cryomilled in medium of evolved nitrogen. ^ EFFECT: product obtained from non-traditional raw materials has taste and aroma similar to flavoured coffee when brewed. |
