PURPOSE: A method for producing dried fruit is provided to improve drying time, yield, product color and sugar content compared to a conventional method. CONSTITUTION: A method for producing dried fruit comprises: a step of peeling fruit; a step of cutting peeled fruit; a step of freezing the fruit at -15±2°C for two to three hours; and a step of cool-air drying at 38±5°C for three days. The used fruit is pear, apple or persimmon. |
