<p><P>PROBLEM TO BE SOLVED: To provide a quality determination device of vegetables and fruits capable of improving determination accuracy of an internal quality by irradiating light having a quantity suitable for respective conveyed vegetables and fruits regardless of the size, a placing attitude, a conveyance pitch or the like. <P>SOLUTION: An internal measuring means 8 is constituted of a light projection means 53 for internal measurement for irradiating light to the vegetables and fruits 1, and a light receiving means 54 for internal measurement for receiving and spectrally diffracting light from the vegetables and fruits 1 and measuring the spectrally-diffracted light. The light projection means 53 for internal measurement has a light source body 53a for emitting light, and a light quantity changing means 13 capable of adjusting the quantity of light emitted from the light source body 53a.
