PROBLEM TO BE SOLVED: To provide a sherbet ice manufacturing device and sherbet ice manufacturing method capable of further widening a condition range of finished sherbet ice. SOLUTION: By using the sherbet ice manufacturing device equipped with an ice maker scraping off ice produced by cooling salt water in a tank to produce sherbet ice, a fresh water introducing device introducing fresh water into the tank, and a controller controlling a fresh water amount introduced by the fresh water introducing device so that icemaking can be carried out in a state of maintaining the salt water in the tank at a predetermined temperature, the manufacturing of the sherbet ice is carried out so that icemaking is stopped when a water level is achieved providing a desired ice amount by changing an introduced fresh water portion into ice while maintaining an icemaking temperature.
