The invention relates to a powdery agri-food composition obtained by: 1) bulking a base containing whole eggs and optionally at least one of the following ingredients: one or more cereal fractions, sugar, water, at least one food additive; 2) optionally incorporating into the product resulting from the bulking 1), at least one of the following ingredients: one or more cereal fractions, sugar, water, at least one food additive, provided that the incorporation of the cereal fraction(s) must necessarily be carried out if the product from step 1) does not contain any cereal fractions; 3) dehydrating the product from step 1) or step 2) down to a hydration level lower than or equal to 15%, preferably to 10%, and more preferably to 8%; 4) grinding the bulked dehydrated product of step 3) into a granulate powder. The invention also relates to a method for preparing such an agri-food composition. The purpose of the invention is to provide an agri-food composition having properties of interest, in particular barrier properties to humidity and fatty materials. The invention further relates to the use of such a powdery agri-food composition in the production of food products and particularly as an almond-powder substitute. |
