HEALTH FUNCTIONAL DOENJANG CONTAINING ULMI CORTEX POWDER AND PROCESS FOR PREPARTION THEREOF

摘要

PURPOSE: A method for manufacturing the functional doenjang, and the functional doenjang prepared by the method are provided to obtain the medicinal effect by using a Ulmi cortex powder. CONSTITUTION: A method for manufacturing the functional doenjang comprises the steps of preparing a Ulmi cortex powder of 50~100 mesh; preparing 14% salt water by using 83% bay salt; pouring 9L of salt water to 5 kg of the meju prepared by inoculating Aspergillus oryzae; turning it out once after 7 days; turning it out once after 15days; maturing it at room temperature for 30 days; adding a Ulmi cortex powder to the matured doenjang; and maturing it for 30 days.
