PURPOSE: A method for fermenting natural plant or oriental medicinal herb without heating and a composition containing fermentation produced by the method are provided to prevent damage of active ingredient by heating and produce a fermentation having high anti-oxidation, anti-cancer, and anti-inflammation. CONSTITUTION: A method for fermenting natural plant and oriental medicinal herb comprises: a step of pulverizing the plant or oriental medicinal herb then mixing with water to prepare fermentation medium; a step of inoculating lactobacillus and yeast then fermenting without sterilization; a step of collecting fermentation liquid; and a step of maturing the collected fermentation liquid. A composition containing the fermentation is cosmetic composition, food composition, and pharmaceutical composition.
