FIELD: food industry. ^ SUBSTANCE: invention is related to preserved food industry. After closure jars and placed into the bearer that provides mechanical sealing of jars. Then they are heated in water of temperature equal to 70C, during 5 minutes with following placing into water with temperature of 85C for 5 minutes and then into water with temperature of 100C for 10-25 minutes. After that tins are cooled down in the air flow during 20 minutes at speed 3-4 m/sec. During heat treatment, jars are turned upside down at a frequency of 0.1 s-1. ^ EFFECT: finished products quality improvement, reduced process time of preserves heat sterilisation and saving of thermal energy. |
