摘要 FIELD: food industry. ^ SUBSTANCE: invention relates to condensed milk preserves with sugar production technology. Method provides for growing of lactose crystals in condensed milk with sugar during cooling down from 60-64C to 18-22C. Footing is performed at 31-37C. Condensed milk cooling after adding of footing is performed at a speed of 0.75-1.0 deg/min for obtaining of homogeneous lactose crystals not bigger than 4 mcm. Suspension prepared by mixing of fine-crystalline lactose and vegetable oil in ratio from 1:5 to 1:10 in quantity 0.12-0.22% to products weight is used as footing. ^ EFFECT: invention provides increase of uniformity coefficient of crystals sizes and improvement of organoleptic properties of the product. ^ 2 ex
