摘要 FIELD: food industry. ^ SUBSTANCE: invention is related to sugar refining industry. Method provides ripeness determination of edible roots ripeness after separation of soil and additives from edible roots. Edible roots are partitioned into categories with low ripeness level 0.032-0.027 g-ion/l of kalium and natrium, medium ripeness level - 0.027-0.022 g-ion/l and high ripeness level - 0.022-0.017 g-ion/l. After that edible beet roots are piled in clamps separately according to the categories. Beet roots storage is performed at relative air humidity inside the clamps: 92-95% for low ripeness level, 87-90% -for middle ripeness level and 82-85% - for high ripeness level. Temperature inside the clamps makes 0-2C. ^ EFFECT: invention allows to increase edible roots decay stability and lower daily average sugar losses. ^ 1 ex
