<P>PROBLEM TO BE SOLVED: To provide an easily available bioethanol raw material other than cellulosic raw materials and substituting crop raw materials, and a method for producing ethanol at a low cost by using the bioethanol raw material. Ž<P>SOLUTION: Provided is a method for producing ethanol by using the rhizome of a Pueraria plant as a raw material. The method includes (a) a liquefaction step to add a heat-resistant liquefaction enzyme to a Pueraria plant and incubate at 60-80°C for 0.5-3 hr, (b) a saccharifying step to add a heat-resistant saccharifying enzyme to the product of the step (a) and incubate at 40-60°C for 0.5-3 hr, and (c) a fermentation step including alcoholic fermentation of the product of the step (b).
