<p><P>PROBLEM TO BE SOLVED: To provide a method for adjusting the productivity of an enzyme of a filamentous fungus culture product, especially a starch digesting enzyme, a vegetable fiber digesting enzyme and a protease by controlling the releasing rate of nutritive substances in culture raw material into a culture system in the production of a filamentous fungus culture product obtained by culturing a filamentous fungus in a liquid medium containing cereals. <P>SOLUTION: The method for producing a filamentous fungus culture product involves using a heat-treated liquid medium containing barley or wheat the surface of which is wholly covered with husk (excluding unpolished grains) and a nitrate and a phosphate as inorganic salts, increasing the inorganic salt concentration of the liquid medium in heat-treatment, and culturing Aspergillus kawachii or Aspergillus awamori while controlling the releasing rate of the nutritive substances in the barley or wheat into the culture system thereby adjusting the productivity of glucoamylase and/or acid-stableα-amylase of cultured rice malt. <P>COPYRIGHT: (C)2010,JPO&INPIT</p> |
