PRODUCING PROCESS FOR WATER SOLUBLE BETA-GLUCAN

PURPOSE: A process for producing water soluble beta-glucan is provided to efficiently prepare beta-glucan with excellent pharmacological activity due to small particle size by extracting and purifying water soluble beta-glucan from a mushroom in a specific condition. CONSTITUTION: A process for producing water soluble beta-glucan comprises the steps of: pulverizing a mushroom to be a size of 10~200 mesh; extracting the pulverized mushroom powder using water at 70~99°C and pH 10~12 for 15~30 hours; and purifying the extract using an organic solvent at 1~10°C for 10~30 hours.
