<P>PROBLEM TO BE SOLVED: To provide a method for assaying inulin by which the inulin can simply and accurately be assayed in a short time without being affected by a difference in average molecular weight, and to provide an assaying reagent. Ž<P>SOLUTION: In the method for assaying inulin, a maximum value L and a minimum value S of sensitivity when inulin is assayed within the range of a 2,000-7,000 average molecular weight hold the relationship of the formula: [(L-S/L)]×100≤20. Especially with the method for assaying inulin and the assaying reagent, in a reaction solution or the assaying reagent in a step of hydrolyzing inulin into fructose with an inulinase, followings are satisfied: (i) the exoinulinase activity is ≥15 U/mL; (ii) the exoinulinase activity is ≥5 U/mL and the endoinulinase activity is ≥0.5 U/mL; or (iii) the exoinulinase activity is ≥2.5 U/ml and the endoinulinase activity is ≥1.5 U/mL.
