<P>PROBLEM TO BE SOLVED: To provide an isomaloligosaccharide having an antioxidizing action, and to provide a food or drink using the same and having an antioxidizing action. <P>SOLUTION: Provided are the isomaloligosaccharide as an excellent saccharide material, characterized by having the same saccharide composition as a conventional isomaloligosaccharide composition and containing hydroxymethylfurfural as an indicator of melanoidin having an antioxidizing action; and the food or drink using the isomaloligosaccharide and having the functions and antioxidizing action of the isomaloligosaccharide. <P>COPYRIGHT: (C)2010,JPO&INPIT |
