LEUCONOSTOC CITREUM PRODUCING MANNITOL AND METHOD FOR PRODUCING MANNITOL USING THE SAME

A novel Leuconostoc citreum strain isolated from kimchi is provided to be able to produce mannitol with high yield. A method for producing mannitol using the same strain is provided to be able to obtain highly concentrated mannitol through a fermentation process under an optimum fermentation condition of the strain without isolating dehydrogenase and NADH. A Leuconostoc citreum producing mannitol is deposited as a deposition no. KACC 91264P. A method for producing mannitol comprises the steps of: (a) fermentation culturing the Leuconostoc citreum at a temperature of 20-40 deg.C under pH of 5.5-7.5 in a culture medium with maintaining the concentration of fructose at 50-200g/l and the concentration of an yeast extract at 0.2-1.4 wt/vol.%; and (b) isolating and purifying the generated mannitol from the culture medium.
