<P>PROBLEM TO BE SOLVED: To provide a powdered gelling agent composed of milk components and exhibiting a gel-like action without being heated, to provide a gel-like food not changing a flavor and not draining a whey, and to provide a method for producing the same. <P>SOLUTION: The powdered gelling agent is formed by spray-drying a dispersion containing lactose, whey proteins, and insoluble calcium.
