Production of raw dough (I) from starch-containing starting material (II) involves forming a (II)-containing dry mixture containing coarse and fine particles; splitting a continuously transported stream of the mixture into two partial streams, containing mainly coarse and mainly fine particles respectively; wetting the coarse stream with water; and combining the wetted coarse and dry fine streams and mixing. Production of raw dough (I) from starch-containing starting material (II) (specifically cereal-based flour, fines and grits) involves: (a) forming a (II)-containing dry starting mixture containing coarse and fine particles; (b) continuously transporting a stream of the mixture; (c) splitting the stream into at least two partial streams, one containing mainly coarse particles and another containing mainly fine particles; (d) wetting the particles in the coarse particle stream by dosed supply of water; and (e) combining the wetted coarse particle stream and dry fine particle stream and mixing the wet combined stream until (I) is obtained. |
