摘要 PURPOSE: A method for producing Acanthopanax wine is provided to produce Acanthopanax wine with various function and flavor. CONSTITUTION: A method for producing Acanthopanax wine comprises: a step of mixing glutinous rice and yeast then fermenting at 28°C for three days (S1); a step of mixing crude liquor, glutinous rice and Acanthopanax then sealing at 25°C for 10 days (S2); a step of mixing prepared liquor, water, and malt then fermenting at 25°C for 15 days (S3); a step of filtering(S4); and a step of ripening the liquor at 5°C for 60 days (S5).
