<p>The cheese product e.g. fresh cheese and mozzarella comprises coated granules comprising 90% of dairy proteins and/or lactose, an active aromatic and/or a dye and 90% of casein or caseinates, where the granules are dispersed in the cheese product and have a diameter of 1-3 mm. The active aromatic and/or the dye are: microencapsulated; present in the form of dry or concentrated/diluted liquid, or micellar preparation; and free or supported on a matrix. The active aromatic is an aromatic of mustard or pepper.</p> |
