PURPOSE: A rice cake using germinated brown rice and raw yam, and a preparation method thereof are provided to improve cohesiveness, adhesiveness, elasticity, and chewiness for consumer preference. CONSTITUTION: A method for preparing a rice cake using germinated brown rice and raw yam comprises the following steps of: dipping germinated brown rice in water, dehydrating the brown rice, and making it powder; mixing 100 parts brown rice powder, 1-3 parts raw yam, and 1-3 parts corn starch; pulverizing the mixture; kneading the pulverized powder; molding into a predetermined shape; and steaming the molded dough. Sorbitol is added to the germinated brown rice at a ratio of 10-25 : 100 by weight. |
