PURPOSE: A method for preparing fermented soybeans using deep ocean water and Bacillus subtilis is provided to improve taste and flavor as well as hygienic stability. CONSTITUTION: A method for preparing fermented soybeans using deep ocean water and Bacillus subtilis comprises the following steps of: removing foreign materials from beans; washing the beans with freshwater and soaking in soaking water for 5-30 hours; steaming the soaked beans; inoculating Bacillus subtilis to the steamed beans at the same time adding non-reducing saccharide, and fermenting at 35~45°C for 15-24 hours; and leaving the fermented beans at room temperature until they cool, and aging in a refrigerator at 2~5°C for 12-24 hours. The soaking water contains 3-15 parts deep ocean water, 100 parts freshwater, and 1-2 parts mineral component, organic acid, or organic acid containing deep ocean water. |
