摘要 PURPOSE: A natural seasoning using jujube and a preparation method thereof are provided to secure high quality and stability. CONSTITUTION: A method for preparing a natural seasoning using jujube comprises the following steps of: mixing dried jujubes and water at a ratio of 2 to 5 by weight and extracting in conditions of 115°C and 1.5 atm for 120 minutes; soaking window paper in the extract for 30 minutes and obtaining jujube extract; mixing 48-50% jujube extract, 7.1-8.1% sea tangle powder, 6.2-6.9% anchovy powder, 7.0-8.0% dried shiitake mushroom powder, 2.1-2.9% tomato puree, 2.1-2.9% roasted bean powder, 1.5-1.9% sesame powder, 1.1-1.5% red pepper seeds, 2.1-2.9% radish, 0.1-0.3% balloon flower, 4.0-4.9% roasted salt, 10.2-13.1% grain syrup, 2.1-2.9% muscovado sugar, 0.1-0.3% lotus root, and 6.0-7.9% soy sauce; and boiling the mixture at 100°C for 30 minutes and freeze-drying the obtained natural seasoning.
