<P>PROBLEM TO BE SOLVED: To provide paprika pigment pharmaceutical preparations capable of coloring food in red. <P>SOLUTION: The paprika pigment pharmaceutical preparations comprise an oil-in-water emulsified composition which is obtained by emulsifying an oil phase containing a paprika pigment with a color valence (E<SP>10%</SP><SB>1 cm</SB>)of 4000-10000, and a water phase containing water and/or alcohol.
