摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing a fermented alcoholic beverage having excellent taste/flavor by which fermentation by a brewer's yeast is promoted and the taste/flavor of the fermented alcoholic beverage are enhanced in the method for producing the fermented alcoholic beverage and to provide the method for producing the fermented alcoholic beverage by which the operation efficiency in the production of the fermented alcoholic beverage is improved. <P>SOLUTION: The method for producing the fermented alcoholic beverage such as beer or miscellaneous liquors is carried out as follows. In the method, the fermentation with the brewer's yeast is promoted and the taste/flavor are enhanced by using a hydrolyzate of protein raw materials with a high content of amino acids highly assimilable with the brewer's yeast such as wheat gluten or soybean proteins or a prepared material thereof in a part of raw materials. Thereby, the fermented alcoholic beverage having a fresh taste and a body feeling without an off-flavor or an immature flavor is produced.
