METHOD FOR PREPARING DISTILLED SOJU USING UNHULLED RICE

PURPOSE: A method for producing distilled soju using rice bran is provided to reduce labor and cost and lower production cost without removal of rice bran. CONSTITUTION: A method for producing distilled soju using rice bran comprises: a step of adding malt, yeast, lactic acid, water to rice then culturing; a step of dipping, steaming, and pulverizing rice then culturing; a step of adding malt, rice, and water then fermenting to produce second crude liquor; a step of distilling the crude liquor; a step of performing press-distilling or decompress-distilling to obtain distilled crude liquid; and a step of maturing and filtering the distilled crude liquid.
