FIELD: food industry. ^ SUBSTANCE: invention is related to preserved food industry. Method provides for preliminary preparation and packing of scallops into jars. After that jars with scallops are filled with hot water at 85C for 2-3 minutes. Then the water is replaced with filler at 95C, jars are sealed and sterilised in autoclave according to the new mode. ^ EFFECT: invention allows to decrease sterilisation duration and enhance treatment uniformity. ^ 1 ex
