摘要 PURPOSE: A composition for removing astringency of persimmons and a removing method therefor are provided to prevent the blackening of persimmons and to improve marketability. CONSTITUTION: A composition for removing astringency of persimmons comprises one selected among potassium hydroxide, phosphate, and citric acid as an active ingredient. The potassium hydroxide and phosphate are mixed at a ratio of 1:1 ~ 1:2. The 0.2-1 part citric acid is added to the 100 parts composition for removing astringency of persimmons. The composition for removing astringency of persimmons is treated on persimmon stalks and the composition-treated persimmons are kept at room temperature for 1-2 weeks.
