PROBLEM TO BE SOLVED: To provide a method for producing a food or a food raw material enabling obtaining palatability synergistic effect through coexistence of glutamic acid and 5'-nucleotide, and having rich palatability without coarse taste.

SOLUTION: This method for producing the food or food raw material includes adding glutaminase and nuclease to a food material or a food material processed product which contains free glutamine and nucleic acid so as to cause enzyme reaction.
