<P>PROBLEM TO BE SOLVED: To construct branch Izumoring, and to establish a method for systematically producing a 4-branched C-methylated pentose therewith. <P>SOLUTION: Provided is a 4-C-methylketopentose isomerase which can be obtained from a bacterium belonging to genus Pseudomonas and acts on all of four 4-C-methylketopentoses having methyl groups bound to the 4-position of the ketopentoses to epimerize the 3-position, thereby producing the corresponding epimers. The enzyme is preferably an enzyme originated from Pseudomonas cichorii ST-24 (FERM BP-2736). Provided is a method for producing the ketopentose having the methyl group at the 4-position, acting the enzyme on 4-C-methylpentose and then epimerize the product in a state of free branched ketose, thereby producing the corresponding 3-epemerized 4-C-methylketopentose. <P>COPYRIGHT: (C)2010,JPO&INPIT |
