PURPOSE: A method for producing traditional grain wine of Hinoki Cypress is provided to produce a traditional grain wine with phytoncide flavor. CONSTITUTION: A method for producing traditional grain wine of Hinoki Cypress comprises: a step of mixing seed malt with starch ingredient then preparing bred yeast; a step of mixing water, yeast and lactic acid and maturing to produce crude liquor; a step of fermenting; a step of mixing 1-5 weight% of Hinoki Cypress to polished rice then steaming; a step of adding yeast, water, wet rice and Hinoki Cypress, maturing, and fermenting; and a step of fermenting again. |
