<P>PROBLEM TO BE SOLVED: To provide a color restoration method for raw chestnuts which is capable of shortly bringing a raw chestnut color to a vivid yellow color almost the same in the case of using a gardenia pigment, and to provide raw chestnuts whose color is reversed by the method. <P>SOLUTION: This color restoration method for raw chestnuts has an α step (step S3) of soaking raw chestnuts from which astringent skins are peeled, in an ascorbic acid aqueous solution so as to perform color restoration of the raw chestnuts. The ascorbic acid aqueous solution has a concentration in a range of 0.5-5 wt.% and a liquid temperature in a range of 80-90°C. <P>COPYRIGHT: (C)2010,JPO&INPIT |
