PROBLEM TO BE SOLVED: To obtain an oil and fat composition that has a wide range of plasticity, keeps softness even at low temperatures, has extensibility without being broken during a rolling-in operation and shows good flavor and mouth-melting. SOLUTION: The objective rolling-in oil and flat composition is produced by mixing a fat A that has an iodine value of <=10 and includes >=80 wt.% of 18 or higher carbon fatty acids among the total constitution fatty acids with a fat B that has an iodine value of <=20 and includes >=60 wt.% of 14 or lower carbon fatty acids at the weight ratio of the fat A/the fat B=10/90-90/10, then admixing a fat C prepared by random ester exchange and milk fat to the mixture of the fat A and the fat B. |
