摘要 PURPOSE: A method for preparing rice bread using guar gum instead of gluten is provided for use as a gluten-free diet for a gluten-intolerant person. CONSTITUTION: A method for preparing rice bread using guar gum instead of gluten comprises the following steps of: mixing 100 parts rice flour, 1-5 parts guar gum, 5-10 parts corn starch, 1-5 parts tapioca starch, 1-5 parts functional ingredient, 30-60 parts other ingredients, and 50-100 parts purified water so as to obtain dough; primarily fermenting the dough and rounding it, and intermediately fermenting it; and putting the fermented dough in a mold, secondarily fermenting it, and baking it. The functional ingredient is Portulaca oleracea, Sorbus commixta, Kalopanax pictus, or bamboo vinegar. The other ingredients are saccharides, yeast, yeast food, salt, margarine, fat-removed powdered milk, or egg.
