摘要 PURPOSE: A method for producing a sea tangle pork cutlet is provided to add sea tangle into conventional ingredients of pork cutlet in order to improve consumer preference. CONSTITUTION: A method for producing a sea tangle pork cutlet comprises the following steps of: grinding pork to size of 6-14mm(S10); grinding dried sea tangle to size of 0.8-5mm(S20); preparing a first mixture of 20-41% grilled beef powder, 18-25% refined sugar, 8-15% gluten, 8.25-10% MSG, 8.25-10% phosphate, and 8.25-10% soy protein isolate(S30); preparing a second mixture of 20-50% powder, 5-10% garlic powder, 8-12% maltodextrin, 5-10% soy sauce powder, 3-6% onion powder, 3.75-6% sweet whey powder, 3.75-6% white sugar, 3.75-6% black pepper, 3.75-6% Chad beef oil, and 3.75-6% mustard oil(S40); and mixing the 75-85kg ground pork, 5-7.5kg ground sea tangle, 1-3.5kg first mixture, and 1.5-4.5kg second mixture, molding into a cutlet shape, and breading and fast-freezing the cutlet(S50,60,70).
