摘要 PURPOSE: A Sasa quelpaviensis leaf extract using enzyme such as cellulase or pectinase, and a drink containing the same are provided to improve extract efficiency as well as consumer preference. CONSTITUTION: A method for preparing a Sasa quelpaviensis leaf extract comprises the following steps of: dipping Sasa quelpaviensis leaf powder in water at a ratio of 1 to 10; adding one or more kinds of 3% enzymes selected among cellulose and pectinase to the leaf powder liquid; adjusting the pH of leaf powder liquid to 4.5 at 50°C and hydrolyzing for 16 hours; inactivating the enzymes at 100°C for 20 minutes; extracting the liquid at 120°C for 2 hours to obtain an extract; and concentrating the extract at 60°C to obtain a concentrate with 30 Brix. The average size of the Sasa quelpaviensis leaf powder is 140 mesh or larger. The enzyme is added to the Sasa quelpaviensis leaf powder at a ratio of 2-5 to 100.
