<P>PROBLEM TO BE SOLVED: To provide a method for producing ergothioneine comprising steps of extracting, and purifying the ergothioneine using mushrooms having the ergothioneine producibility as a material. <P>SOLUTION: In order to solve the problems, it is found that the mushrooms which belong to the genera Flammulina, Hericiaceae, Lyophyllum, Mycoleptodonoides, Phellinus, and Rozites, and have not hitherto been known to have the ergothioneine producibility produce a considerable amount of the ergothioneine by screening the ergothioneine producibility of the various mushrooms. <P>COPYRIGHT: (C)2010,JPO&INPIT |
