<P>PROBLEM TO BE SOLVED: To provide a method for producing frozen boiled rice for sushi which is improved so as to be more easily thawed by natural thawing or with a microwave oven. <P>SOLUTION: The method for producing frozen boiled rice for sushi comprises: preparing freezing liquid containing an amino acid whose gelatine is made to have lover mol.wt. to facilitate thawing; putting rice soaked in water into a rice pot; adding the freezing liquid, and at least a pH adjuster and edible vegetable oil-and-fat; stirring the mixture; boiling rice followed by steaming the boiled rice while keeping the temperature around the rice pot warm after boiling rice; taking the boiled rice out of the rice pot; cooling the boiled rice to have the temperature of around 50°C; putting mixed vinegar in the boiled rice and stirring the mixture; dividing the mixed boiled rice into bite-size pieces; pressing the pieces to be molded; and rapidly freezing the pressed and molded boiled rice. The amino acid preferably contains outstandingly more glycine, proline and hydroxyproline than other amino acids. <P>COPYRIGHT: (C)2010,JPO&INPIT |
