PURPOSE: A method for preparing processed cheese is provided to charge a storage tank with nitrogen for the finished processed cheese in order to keep the cheese fresh in a long term. CONSTITUTION: A method for preparing processed cheese comprises the following steps of: sterilizing raw milk in a sterilizer at low temperature; transferring the sterilized milk to a cheese vat and cooling the milk; adding a coagulating agent to the cooled milk; stirring the milk and coagulating the same; cutting the curd with a cheese knife; cheddaring the curd to remove milk serum; salting the curd; molding the curd; aging the curd in a low-temperature room; adding butter, softening agent, whey powder, and paprika extract to the aged cheese; melting the cheese and added ingredients; and storing the processed cheese in a buffer tank. |
