PURPOSE: A Saccharophagus sp. strain with agar lysis activity is provided to contribute to industry of functional food and medicinal and pharmaceutica product. CONSTITUTION: A Saccharophagus sp. strain with agar lysis activity is Saccharophagus sp. AG21 of the deposit number KFCC 11416P. The Saccharophagus sp. AG21 is able to lyze alph-1,3 bond and beta 1,4 bond. A method for producing a galactose comprises a step of reacting biocatalyst with reactive substrate at 40-50°C.
