PURPOSE: A method for preparing fast-frozen fruit slices is provided to prevent fruits from being deformed by microorganisms with time in order to maintain the specific taste and mouth feel of the fruits. CONSTITUTION: A method for preparing fast-frozen fruit slices comprises the following steps of: washing fruits in a vinegar water or nanosized-silver water; peeling the washed fruits; cutting the peeled fruits using cutting blades; spraying a natural fungicide over the fruit slices; fast-freezing the fruit slices in a freezer of -30~-50°C; coating the natural fungicide on the fast-frozen fruit slices; fast-drying the fruit slices with a hot-air drier for 2-5 seconds; and re-freezing the dried fruit slices at -30~-50°C.
