MANUFACTURING METHOD OF SEMI DRY SAUSAGE COMPRISING OF DIETARY FIBER FROM KIMCHI

PURPOSE: A method for preparing semi-dried sausages with dietary fiber derived from Kimchi is provided to maintain the taste and flavor of Kimchi at the same time improving preference for foreigners. CONSTITUTION: A method for preparing semi-dried sausages with dietary fiber derived from Kimchi comprises the following steps of: squeezing Kimchi to remove moisture and juice therefrom; pulverizing Kimchi with a cutter; drying the pulverized Kimchi at the temperature of 60°C for 12 hours; re-pulverizing the dried Kimchi for 30 seconds; passing through a 35mesh sieve to obtain Kimchi powder; and mixing the Kimchi powder with raw meat for sausages.
