FIELD: food industry. ^ SUBSTANCE: method provides for mincing of cucumbers, production of juice, washing with 0.5-1.5% solution of drinking water, pressing of solution out of cucumbers, adding of olive solution at 85-100C to the obtained mass, keeping of it in the solution during 0.5-1.5 days at 5-15C with following solution pressing. ^ EFFECT: invention allows to obtain product imitating tinned olives and can be used for production of first and second courses, salads, pizza, sauces. |
